Salmon Patties
1 can Salmon - I take out the bones
1 cup Italian Bread Crumbs
1 Cup Crushed Saltine Crackers
1/3 cup Finely Chopped Onion - I used Vidala onions
1/4 cup plus 2 TBS Milk
2 Eggs
2 TBS Parsley
1/4 tsp Salt and Pepper or to your taste
Mix all ingredients. Take one table spoon full of mixture and make into a ball, flatten out. Fry in Butter till brown on both sides. Put on paper towel. Then eat your heart out. I like ranch dressing but the boys they like ketchup. Then again there so good you don't need anything. I also made some hash browns to go with it.

Fried Green Tomatoes
I started out with Green Tomatoes fresh from my front yard garden. My plants are doing really good I would say. So I brought my Green Tomatoes into the house and washed them really good. I do put seven dust on my plants to try to keep some of the bugs and worms away. So I cleaned the Green Tomatoes real good and then cut them up into slices. I'm using corn meal with some salt and pepper, egg with a bit of water( you probably don't need the water cause your frying them in oil, but I did)and then I have some Italian bread crumbs. I was watching a show the other day and the guy was making chicken fingers and he said to do the dry first and then wet. Well I've never done that before so I tried it today. It worked. I usually would dip in egg and then corn meal but now I will do both. So I did a few corn meal egg and then bread crumbs. Then a few corn meal egg and then corn meal ( I guess you would call that double dipping). Then I made a few egg and then corn meal. I Liked the egg then corn meal but the boys liked the double dipping and the Italian. Make sure you use OIL and not corn syrup like someone else i know.LOL fry for just a few on both sides and then put on paper towel. Eat how ever you want too, we like ranch dressing.

The Fried Green Tomatoes were good. If I could get the boys to eat them they must have been good. Justin couldn't eat one cause he's allergic to tomatoes. I asked Chris and Jimmie to tell me witch one they liked the best and they liked the ones that looked burnt (Italian Bread Crumbs)out of all of them. Kids you just got to lov'um. So I hope who ever makes these they turn out just as good as mine

Choclate Buckeyes
My friend Renee, her mother always made Buckeyes. I got this recipe from her years ago and I still LOVE those Buckeyes (Go Wolverines).
Buckeyes
1 lb Peanut Butter
1/2 lb Butter - (melted)
1 1/4 lb Confectioners' Sugar
1 (12 oz) Chocolate Chips - (melted)
1/3 slab Wax
Mix Peanut Butter, Butter, and Sugar in a bowl. Roll Peanut Butter mix into 1 inch balls (I like to refrigerate Peanut Butter mix for an hour before making into balls). Melt in double boiler (if you have one) Chocolate Chips and Wax. Take Peanut Butter balls and using a toothpick stick into Chocolate Chip and Wax mix.Only put in 3/4 way to make them look like Buckeyes. Put on wax paper and let cool. Store in refrigerate if you would like. Not sure how many they make cause I'm always eating them as I make them.

Surprise Chocolate Fudge
I got this recipe when I was still cutting hair. Miss Betty would bake us something for Christmas every year and this is one of the fudge recipe thats she made for us. When I asked her for the recipe I was very SURPRISED when I seen what it was made with.
1 can (15 ounce) Pinto Beans - (rinsed and drained)
1 Cup Baking Cocoa
3/4 Cup Butter or stick Margarine - (melted)
1 Tbs Vanilla Extract
7 1/2 Cups Confectioners' Sugar
1 Cup Chopped Walnuts - (or any kind of nuts you like)
Microwave safe dish, mash Beans with a fork until smooth; cover and microwave for 1 1/2 minutes or until heated through. Add Cocoa, Butter and Vanilla. (Mixture will be thick) Slowly stir in Sugar; add Nuts. Spray a 9 inch square pan with non-stick cooking spray. Press mixture on to pan, cover and refrigerate until firm. Cut into 1 inch pieces. Yield: 3 1/2 lbs

1 Cup Chopped Nuts - Pecans, Walnuts, etc...
2 (16oz)Boxes Confectioners' Sugar
1/2 Cup Cocoa Powder
Spray 9x2 inch pan with nonstick spray set aside. Melt Cheese and Butter on stove or microwave. Remove from heat add Vanilla and Nuts stir. In large bowl sift Sugar and Cocoa together. Pour Cheese mix in Sugar mix stir together well. Press mix in 9x2 pan. Pat top with paper towel to get excess oil. Put in refrigerator until firm. Cut in to squares. Yield: about 3 1/2lbs.
I like to put mine in freezer bags and put in the freezer. There really cold but there not as soft as they would be in the refrigerator. I hope you like this recipe and with any fudge this is really rich.

Mike Vallely & Skyler in Hot Springs AR
We were visiting Hot Springs after the death of my brother Walter "Scottie" Scott Jr. when a group of people and a few camera men were walking by us. So I said "So you think y'all are famous or what" and some guy said "no". So they walked on by and Skyler grabbed my arm and said "MOM THATS MIKE VALLELY"!!! And of course I said "who"? So he kept telling me and telling me. So of course, the mom that I am, I yelled at the dude and said "Hey are you Mike somebody"? Of course they kept walking and of course I kept asking. He finally stopped and told me who he was and took a picture with Skyler. I did ask him to do one big favor for me in the honor of my brother and that was to give him the bunny ears. Why my brother Walt did that to everyone I will never know but I guess you could say that it was his trade mark. Mike Vallely also gave Skyler a little bit of advice "Never Ride Your Skateboard In Hot Springs Or The Police Will Bash Your Head In" So I would just like to say thank you Mike for the advice and the bunny ears.
